Summary of Food Reactions

In this hub, I will share with you notes from my food reaction diary. My son and I did an elimination diet a few years ago to investigate if any of our health and behavioural issues were related to food. I was very surprised to find that everything from my years of chronic pain, skin rashes, depression, and my son's persistent vomiting and screaming were triggered by food chemicals.

In a nutshell, an elimination diet involves taking out foods of a certain family for a few weeks and then testing them and observing reactions. I decided to test various foods from a given family one at a time, to allow me to distinguish which chemicals gave rise to which symptoms.

In addition, I learnt I was celiac (autoimmune reaction to gluten) and had a milk allergy, which was confirmed by medical tests. Our sensitivities appear to be permanent (genetic/biochemical), but will hopefully reduce in severity as my son gains body mass, and with time off gluten and dairy for me.

My son is fine with A2 milk (A2 cow's milk and sheep's milk yogurt), but vomits A1 dairy (even in small amounts hidden in foods). Since strictly avoiding A1 dairy, the improvements in his health have been incredible . He is very sensitive to food additives and also to some natural chemicals (triggering mega-meltdowns and other ugly behaviour).

We have Asperger's Syndrome (a form of autism), and food allergies are frequently associated because of dysfunction of immune system.

My Food Reactions

I didn't bother testing out what all the colours do to me, as they are generally found in foods containing dairy and gluten anyway.

I had been very sick for over a decade with declining health - an anxiety disorder, depressive disorder, pain disorder (I had raised inflammation markers), and numerous infections eg sinus. I had chronic fatigue, a chronic state of brain fog and it hurt to even touch my skin. I had rashes, including a rash around my mouth and nose (perioral dermatitis). My skin formed raised red welts at the slightest scratch (dermographism) I had thyroid problems including cysts. My hair was dry and brittle, I had very low blood pressure and was on the verge of collapse and I couldn't regulate body temperature - I was too hot or too cold. My body was puffy all over. I had supersensitive skin and my eyes were constantly dry and scratchy.

Within days of going gluten-free, the brain fog I'd been plagued with for years lifted and I was able to think clearly. I had relief from over 5 years of chronic pain, including bone pain. The eay bruising I'd had since I was in my teens (and first suffered symptoms including depression) was gone. My blood pressure became stable. After a few months, I lost the excess weight I'd been carrying for the past few years. My hair grew back shiny and healthy. I started to get my life back. The thyroid cysts vanished, as did the antibodies against my thyroid (sparing me from surgery and hormone treatment). Brushing my teeth was no longer an excruciatingly painful experience.

I am very careful to avoid gluten (which is hazardous to celiacs even in trace amounts). Even a small amount from cross-contamination makes me ill, and my blood pressure becomes so low it is dangerous to drive. An exposure to gluten also makes me feel anxious and ill for days.

I've had my diary allergy confirmed by a blood test (ELISA). Unfortunately, I am unable to tolerate A2 milk and butter like my son can. Palm oil (used as a dairy-free substitute in gluten-free products) gives me identical symptoms. Even McDonald's fries have a little palm oil in them that make me ill. Even a small exposure, like a little butter leaves me with low blood pressure, nausea and body pain for more than a day. Avoiding these three (gluten, dairy, palm) restricts my diet significantly, but I am so much healthier now.

I no longer cough up copious amounts of mucous each morning, and I have not had a sinus infection or any other infections since changing my diet.

With salicylates and amines, I was so extremely sensitive at first that I would react to even the tiniest amounts. Gradually, I am improving, and can get away with a little more. For example, cocoa used to keep me wide awake all night and have me covered in red welts. Now, the insomnia is mild and I have mild itchy skin and eyes that I can live with. If I overdo the amines, I find an antihistamine tablet and some vitamin B6 brings relief.

My depressive disorder is finally under control. Salicylates are the culprit for me (and my threshold was lowered extremely by my untreated allergies and celiac disease). I eat foods low in salicylates, and sometimes in the moderate range.

Irritable bowel is rare now - usually only triggered by amines now, if I have too much (I avoid the other culprits dairy, gluten, palm).

Pre-menstrually and menstrually, I am careful with amines and salicylates, because my threshold is lower at this time. If I strictly avoid these, I can be completely PMS free - no migraines, depression etc. Plus, no heavy bleeding (which meant considering a hysterectomy - an operation my exhausted body would not have coped with).

Son's Reactions

I've been aware that my son has had a sensitivity to dairy since he was a baby. I was very sick when he was a baby, and couldn't continue breast-feeding, so he was put on whey formula (which has small amounts of casein). That was the start of constipation, chest infections, mucous, glue ear, ear infections (resulting in burst ear-drum), asthma and more. There is asthma in the extended family, but I did not believe he had true asthma. Doctors ignored me when I voiced my concerns. They just said he had hayfever, and prescribed antihistamine (which had ingredients that triggered screaming episodes).

When we tried to switch him to casein follow-on formula, his airways would immediately fill with mucous and he would become distressed. Once we called an ambulance because he had high fever and was experiencing breathing difficulties.

He loved dairy, and ate plenty. He also vomited frequently - in his bed and in the car. He had frequent illnesses (the doctors said it was numerous colds/viruses). When we moved from New Zealand to Australia, his nose-bleeds became daily, and his vomiting increased. We suspect the milk is a different composition in Australia, higher in A1 protein. He was so full of mucous, that we had to give him antihistamine each night to help him sleep.

Off dairy, the vomiting stopped, the blood noses stopped, no more mucous, no more wheezing and he became alert was able to think clearly. Previously, he had been in his own little world (more autistic). He's gained weight and now has muscle tone. Even a small amount of dairy in chocolate or a biscuit will bring back symptoms. He is fine with trace dairy in butter (whereas I am not) and he drinks A2 milk with no problems.

Fortunately, he didn't inherit the celiac gene. His diet is not nearly as restricted as mine, although he self-restricts because he is extremely fussy (from sensory issues - also common in ASD).

He has major behavioural & mood issues with additives, including colours, flavour enhancers and preservatives. The worst offenders are some preservatives commonly found in fruit and crumbed products and children's medications. The screaming fits that result are unbelievable - extremely loud and high pitched. He no longer falls to the floor unconscious (but screaming), but reacts in rage (he gave a boy at school a black eye after losing control on these chemicals). An EEG didn't show any abnormalities, and we have been told that the scream and rage is from brain irritation (much like the inflammation from meningitis) - basically it's a headache so extreme, that he goes berserk.

He tolerates higher levels of salicylates than I do, but if we get it wrong, we pay for it with moody, screaming meltdowns (the scream isn't quite as bad as the preservative scream, which is quite primal and scary). If he's had way too much at once, he will lose bowel control (which smells terrible and is horrid to clean up). It's hard to find lollies he can have. Most are too high in salicylates, including the "natural" ones. Plus most have artificial colours. Many have dairy. We found some flavours of Methos lollies he gets away some with on occasion.

His reactions to amines are very mild. He used to get a bit of anxiety, like night terrors, but he has outgrown that. He has skin that marks easily like me, but is able to tolerate quite high levels of amines without the problems I get (like irritable bowel, migraine, insomnia). Hopefully, with time, I will get to that point too.

What I Miss Most

Freshy baked bread is my favourite.  I am celiac so can't eat wheat.  Unfortunately gluten-free bread is not as nice.  Neither is GF pasta.

Husband's Reactions

My husband didn't do a complete elimination diet (he was initially very negative about it). He just happened to be eating better, because I was buying food without artificial additives. Also, he agreed to go without cheese so that our son didn't feel bad. Generally, the only dairy he had was our son's A2 milk in his coffee.

We noticed some dramatic changes. A lot of weight fell off. He was no longer fat around the neck, face and belly. I can always tell when he's had dairy, as this is where he swells up. At first he didn't believe me, until a week of consuming a dairy protein drink ended with food poisoning type symptoms (violent tummy cramps, diarrhoea, vomiting). After many occasions when he's had severe tummy cramps after eating dairy, he now avoids it for the most part.

He also became less grumpy. He used to be irritable a lot. Now he only behaves extremely irritable/moody/depressed after eating out (I think it's the flavour enhancers and artificial sweeteners, but we haven't been able to confirm).

He's the luckiest one, as he can pretty much eat what he wants. I do most of the cooking and generally cook quite plain meals these days (lower in chemicals). He can add sauces of his choice.

Hopes for the Future

We expect our son will be able to get away with a little dairy like his father as he gains more body mass. He should also be able to tolerate more salicylates without effects.

My diet is the most restrictive. Eating out is a huge problem these days. If we go to a restaurant, I request a gluten-free/dairy-free meal. I take my chances with the salicylates and amines and allow myself a day or two to get over it (plus histamine takes the edge of the amine reaction). There is nothing that takes the edge off a salicylate-induced depressed mood. I have to wait until it passes - it's not nice to feel this way against my will.

Sometimes my husband feels resentful that I don't enjoy eating out anymore. I miss bread the most. He ordered freshly baked bread for an entree and it was hard watching him eat it. I don't go with the boys to McDonalds because I can't even eat the chips.

Being celiac, I need to avoid gluten for life. Since I have a very strong immune reaction to dairy (and an identical reaction to palm), it is likely this is permanent too. I used to get away with eating some cheese and yogurt when I was younger. I can't even have trace dairy now.

We don't so much get a cold now. Our food reactions can give fever, aches and pains, congestion and more. I can easily tell what food chemicals are affecting us now.

Eating for me is about survival, not pleasure. Unfortunately, the foods I'm most sensitive too are ones I like most. I also like highly flavoured food from different cultures, but they're loaded with salicylates/amines (and often gluten/dairy). Just being gluten-free would be manageable. But feeling healthier is worth the sacrifices. Hopefully, my sensitivities to salicyates and amines will continue to decrease, and I can enjoy more variety in diet.

Yeah its pretty rotten being celiac- i have 50 years experience- it wont all be plain sailing- you may find your tolerance levels increase and then wham! decrease! just try and feel in tune with your body- sometimes i do it well, other times not...so no one is perfect- good luck to both you and your family

Caseworker - it wouldn't be so bad if I was only sensitive to one food group. But because I am also allergic to dairy and palm, and have increased sensitivities to other food chemicals (no doubt from years of illness), it makes eating very boring. Bread happens to be my favourite food, which is a bummer (the GF stuff just isn't the same).

Baileybear, i too have food sensitivities but luckily i don't have celiac's. The things i can't tolerate are, peanuts, milk, yeast, eggs, alcohol, soy, sugar and just about every known preservative. It sucks being like this and i wish there was a cure or even a magic pill that could take it all away temporarily for one meal here and there.

The symptoms i get from the preservatives give me bad insomnia and i feel hypo.

Glassy, yeah, it sucks not being able to eat normal food, but at least I feel much better this way. I was rather annoyed at the teacher of my son - he came home with a pile of lollies, a gift from the teacher. He had mega-blood-nose and was moody and erratic (from the salicylates) then the additives kicked in and he was hyper, loud, with uncharacteristic behaviour eg pooed in the garden, pooed in 3 pairs pants, broke something his dad has been building for ages...then hubby puked when he saw poo in garden....and guess who had to clean the lot up!

I get insomnia, skin rash and irritable from foods like cocoa. I ate some gluten-free choc cake and my guts are playing up. Skin irritation and insomnia not as bad as when still on gluten.

Some very familiar stories. Ive been down this path for about 5-10 years now.

I came across your page looking at amines, im trying to find what causes me these bleedy red chest welts. one of the last of my annoying symptoms they arent severe anymore but boy do they itch and if i scratch they will bleed, i think it may be amines.

At first i was very allergic to

* gluten, dairy, sulphites, free glutamates

not sure on salicylates.

i dont think i have the palm oil issue. i eat cold pressed coconut/palm oils regularly. they are rich in medium chain fatty acids that are good for gut health, they kill bad bacteria and gut yeast but leave good bacteria unharmed. whereas something like raw garlic (which i found a lot of salvation in) just kills everything.

most 'palm oil' listed as an ingredient in processed foods should really say 'hydrogenated palm oil'. hydrogenation / treatment makes fats more inflammatory the more they are treated, horribly bad for the body in many ways.

anyway, long story short i kept cross checking symptoms with illnesses until i got a positive diagnosis from a nutritionist & doctor for copper toxicity. I got a provoked toxic metal screening test which showed high levels of lead & mercury and other rubbish which has been exacerbating the copper problem. I got a blood test to confirm it they check copper in blood vs copper in blood plasma, this shows how much is free and unbound. Among a large treatment program he recommended i avoid sulphites. I got to gluten and dairy through elimination diets as a kid but boy did life improve after that sulphites moment, no more constant sinusitis, significant lessening in depression and body aches, mind fog gone, it was like waking up for the first time.

All of the trace elements used in the body are transported around using proteins, copper is transported using sulphur proteins this is the connection. excessive copper can damage this mechanism causing free radical copper to be released into the blood stream with a myriad of related problems. copper is also a zinc antagonist, so excess copper will deplete zinc. immune cells are primarily zinc based, the immune system doesnt work well without zinc. this explains the bone infection as a child and the *years* of constant tonsillitis and gut / immune troubles. it also puts science behind the sinusitis and mind fog clearing.

sulphite sensitivity i believe can be a hallmark for excess copper. how severe the reaction is, i believe, can show how severe the copper problem has become if it is the cause. sulphites occur naturally in small traces in foods, they are actually a natural molecule. many preservatives are just chemicals i dont think we should eat at all but the human body *should* be able to cope with sulphites, by converting them into the natural usable sulphate. more support for this copper connection.

this is great and all... but the trouble is how often it is in foods but hidden/illegally added. some examples from where i live in Australia:

there was an expose showing some 50% of budget mince has sulphites illegally added. when i eat meat i try to stick to actual organic cuts of meat.. and the frozen preservative free sausages. just cant trust anything else.. the sausages might not have it added but has the mince it was made from?..

a lot of fresh seafood is treated with metabisulphites before it even gets packed into crates. I eat seafood only rarely and only if it is a real top shelf premium brand i know that has ensured its uncontaminated from water to shelf. fish itself isnt so bad its all the other random seafood.

Only after getting behind the counter for a job trial at one of the major coffee chains did i find sulphites in pretty much all of the syrups. The tasty blended drinks have them, so does the iced coffee syrup and they make up the 'chai tea' and 'chai latte' in bulk in the morning with the syrups.

In pretty much ALL fast foods here including mcdonalds any chips that are bought pre cut and packaged are preserved with sulphites. all of them, no 'fast food' has the time to cut chips. they probably all come from the same potato cutting machine/factory. most of the chicken places use stuffing with sulphites and some even use sulphites/gluten/msg/dairy... all four.. mother of god... even if you dont eat the stuffing its gotta cook into the chicken.

almost all wine here and most other alcohols are sulphited and ever if they arent it is often used in the production of alcohol to clean sterilize the tanks/barrels and prevent mold spot thus containing traces. alcohol doesnt help my gut progress anyway but unless its preservative free i cant trust em its always problems.

I just dont drink, I just dont eat out. Its not worth it. I go work on organic farms on the weekend and bring home food where i know every single damn molecule that has gone into it and touched it.

Im not actually celiac and yet i react to gluten and now my tolerance for it has increased, i drank beer i thought was gluten free but wasnt and barely noticed my body temp rise which is my tell tale sign of inflammation. In my opinion its not gluten intolerance per say but more of a general gut problem, candida and bad bacteria overgrowth in the gut, i got a microbial analysis test showed how deficient in good bacteria strains i really was. The hair mineral analysis is also another good test, these tests were incredibly eye opening and the people who know such tests are often quite smart. Gluten and wheat is pretty much the starchiest thing out, its the worst food for feeding bad gut microbes its one of the worst starchy foods. I have had great results with the no/low starch diet and with low glycemic index foods in general. pure sugar is also just as bad as starch.

Ive had a gut specialist tell me the protein in dairy called casein feeds gut yeast badly, i think she is right. i think all these things feed the bad stuff. none of it is optimal food for humans.

after years and years of work i would now only say i have sulphite intolerance due to copper toxicity the rest is mild enough that traces and small amounts wont do much although i still dont eat it at all if i can, its still not optimal food for humans. I keep taking my moly/zinc for the copper and hope one day i will not react to sulphites. though i was kinda born with it and have had it for ages so there is the possibility the mechanism is kinda just broken now. time will tell.

fibre is the best, ive learned that when good bacteria in the gut eat fibre they produce acids that kill bad bacteria. the acids the good bacteria produce are 'short chain fatty acids' vinegar itself is pure short chain fatty acid (acetic acid). now that i eat kale and lettuce every day and have a apple cider vinegar & bicarb drink every day i barely have any symptoms at all, just the lingering arthritis and random small skin things left. i take magnesium most days as well this seems to keep my moods level.

have you tried pro-biotics? not everyone can tolerate them, most of them i couldnt, i couldnt eat any yoghurts or milks at all for so long but after i got a bit better i tried a few different ones and found i can tolerate some of the ones that come in powdered sache form, the one i got from the good doc is called VSL#3 which however ridiculously expensive it may be i found quite good. i still avoid all dairy (casein is badmmk) but yeah my only reaction now is minor minor acne i dont get all the crazy stuff anymore. when i get some more money i am going to get more vsl i think its the best probiotic on the market though i always look for better ones, more culture and less milk or whatever they grow it on. i wish there was more non animal milk yoghurts all of the soy ones have so much sugar in them they make me ill anyway.

do you take fish oils? anti-inflammatory oils could help with the palm oil issue. oils are like a seesaw anti-inflammatory oils tip the seesaw back the other way. cold pressed coconut oil is very good too.

Ryan - thanks for sharing your story. I did a course of dairy-free probiotics, but didn't make much difference. Think it's mainly genetics for us.

Ryan, it may be the salicylates causing your hives (red itchy welts); I was diagnosed with angioedema (swelling beneath the surface of the skin) back in 2000 but mine was my tongue, very life-threatening and I was fortunate enough to have a doc who knew about it -- a family friend of his had died in the bathtub with it so he studied up, lucky for me. probably saved my life. until then hadn't a clue why I was headachy, tummy upset, vomiting, face swelled up like a chipmunk, etc. from various foods. Mine was triggered by o.d.'ing on aspirin over a period of about five years when I took them every night to sleep plus pain in knee joints. Found a wonderful website from New Zealand that has diets for sensitive people. here in the US the docs mostly just give out pills for everything, I was lucky mine put me on antihistamines instead of steroids which he doesn't believe in.

gerry - I had all over swelling and pain for years, but not acutely in my tongue/airways. All from my food sensitivities.

Doctors seem to only know to prescribe pills and surgery (it wasn't picked up by doctors in NZ for nearly 2 decades).

I could have had a few unnecessary surgeries to remove organs playing up because of issues connected to my food sensitivities (uterus, thyroid) while in a very unwell state (and unlikely to recover well from surgery anyway). Those organs and many others much better with diet

Sorry to hear that you've been going through so much. It's not easy, and I know many friends who are in the same boat. The A1/A2 milk debate is especially interesting. Enterolab testing apparently works well with gluten sensitivities, however they are hard to get done from over here in Australia.
